McClain Family Cornbread

Ingredients:
- 1 to 1-1/2 cup self-rising corn meal
- 1/2 cup self-rising flour
- 1 egg
- buttermilk (enough to make thicc batter)
- bacon grease (leggo)

Directions:
1 - Mix cornmeal, flour, egg, and buttermilk until proper thiccness is achieved. Do not add too much buttermilk and make the mixture runny.
2 - Melt bacon grease in iron skillet.
3 - Pour out extra grease from skillet. Save 1 tablespoon of the melted grease to mix with cornbread mix
4 - Pour cornbread mixture into skillet.
5 - Base @ 425°F until brown. Takes about 30-35 minutes
