Zippy White Chili

Ingredients:
- 1 lb chicken breasts, cubed- 1 small onion, chopped
- 3/4 c low sodium chicken broth (ok to use whole can)
- 1 4 oz can chopped green chiles
- 1/2 t garlic powder
- 1/2 t dried oregano
- 1/2 t minced parsley, dried or fresh
- 1/8 to 1/4 t cayenne pepper (according to heat level you tolerate)
- 1 15 oz can white kidney or cannelini beans, rinsed & drained ( I use 2 cans)
- cooking spray
- Tortilla chips
Directions:
1 - - In saucepan coated with non stick cooking spray, saute chicken & onions until chicken is done. Drain if desired.2 - - If chicken is not cubed yet, do it now.
3 - - In same saucepan, add chicken broth, green chiles, garlic powder, oregano, parsley, and cayenne pepper to the chicken & onions.
4 - - Bring to a boil, then reduce heat & simmer uncovered 30 min.
5 - - Stir in white beans & cook 10 min longer
6 - - Serve with tortilla chips
Notes:
I usually add a bit of water to this too. Makes it go a bit further.Cilantro can be used instead of parsley too.
